Oh, so close
There are still some questions swirling around when Gwynn's Coffeehouse will officially open in the old The Place To Be space in Canby's downtown, but those questions are getting closer and closer to being answered.
At least that's the hope of owner Mallory Gwynn as work continues on the space.
"We are in the final construction phase," he said last week. "We are putting the final pieces of construction together. We should be able to get all the plumbing completed (last week) and with that we'll move on to our health inspections (this week).
"Of course that depends on our readiness and their availability," he added.
Gwynn said that as soon as the inspections are done, he and his staff will be ready to open the doors to Gwynn's Cofeehouse. One wild card, however, is the espresso machine Gwynn purchased in June. It's a high-end, "great machine," said Gwynn, but it needs to be thoroughly gone through so everything will work properly and for the long-term.
"You don't want to open without having that machine ready to go," said Gwynn.
And once open, what will Gwynn's Coffeehouse provide? Well, for one, great coffee, according to its owner. But there will be breakfast sandwiches and other items in the morning, a lunchtime menu of soups, sandwiches, and salads, then "we will transition into a wine bar for the evenings," according to Gwynn. "We want it to be a place for people to come and have conversation and be relaxed."
So when will it open? Gwynn said that if the inspections go well and everything moves smoothly, it could be open as soon as Christmas afternoon, but the goal is to open the doors before the end of the year.
"That's our best guess," Gwynn said.
