The Reuben. It's coming back just in time for St. Patty's Day — the mouthwatering beef patty and corned beef brisket, garnished with sauerkraut, Swiss cheese and Reuben sauce on a pretzel bun.
"I had people coming in back to back to get as many as they could," Dillon's Grill Manager Erin Keaffaber said about last March when the pretzel Reuben Burger was the Burger of the Month. "We're bringing it back."
But, if you're a Reuben fan, you can only order it during March at Dillon's Grill.
"We do a different one each month," Keaffaber said. "It's fun. It's exciting. We always bring in a new ingredient."
"We call it Dillon's Grill Exclusive," explained the restaurant owner Jim Roths. "It's something that is fun for us to do. It's a way for us to get creative, just to play around."
The Burger of the Month may also include a sandwich or a special item for a limited time.
Roths and Keaffaber came up with the idea for Burger of the Month during one of their many brainstorming sessions.
"We were talking about specials in general and what can we do," Roths said, and they decided instead of offering a daily special to do a monthly special.
"It was a way for us to start doing a special but something we could promote a little bit longer than just a day," Keaffaber explained. "It allows us to bring in newer ingredients, different ingredients, and not have to worry about running out of things."
She said it makes it a little bit easier to plan for the whole month.
"It's also a way for us to try new items, test new products, get new ideas for new menus," Roths added.
Burger of the Month debuted at Dillon's on Jan. 1, 2016. Now, more than a year and a dozen new burgers later, they know which ones they will likely add to the menu when they make a few changes.
The pretzel Reuben is definitely one that will eventually become a regular.
December's special, The Bird is the Word, was another one that will likely make the cut.
"We sold a ton of those," Keaffaber said.
Roths said it's actually more of a sandwich, featuring chicken, ham, Swiss cheese on grilled Texas toast with lettuce, tomato, garlic, mayonnaise and onion.
"It was probably the most popular one yet," Roths said.
The Three Pigs Burger was another favorite.
"People were coming in every day at the end of the month because they knew that it was almost done," Roths said.
They've also offered elk burgers and bison burgers.
"We're planning on doing the bison burger again," Roths said, adding that the meat comes from Powell Butte Bison Ranch.
They have even offered a Grilled Cheese Burger, which is still available for the rest of February.
All specials come with a choice of fries, cole slaw, baked beans, potato salad, side salad, cup of soup or onion rings.

"We have people that call on the first day of the month, and they're all, 'What is it? Is it out yet? Are we ready?'" Keaffaber laughed. "People are asking the last week of the month for the next one. 'OK, what's it going to be, guys?'"
Roths said the Burger of the Month is a lot of fun.
"It's a lot more fun than trying to come up with a different special every day that sometimes isn't real special," he said. "This way, we can put more time and thought into it and make it more special."
