Last month, Melissa Knockenhauer launched Lyndanna’s Lucious Jams and Jellies, a company that specializes in alcohol-infused jams. by: CORY MIMMS - Ted and Melissa Knockenhauer selling alcohol-infused jams and jellies at Second Friday. Melissa launched the company last month.

Using two recipes Linda Givens (Knockenhauer’s mom) and Dyanna Szlavich (a family friend) came up with 20 years ago, Knockenhauer created more than a dozen flavors.

“We’re getting really good responses,” she said. “It’s an adult gourmet treat.”

The company currently sells at events, like Molalla’s Second Friday, and they take orders over the phone. They deliver in Molalla for a $1 fee, within 25 miles of Molalla for a $5 fee, and up to 50 miles of Molalla for a $10 fee.

To comply with liquor laws, Knockenhauer had to significantly reduce the alcohol percentage in the recipe. The current jams contain less than 0.5 percent alcohol, but she intends to get the proper liquor license that will allow her to sell jams with a higher alcohol content.

To help the business expand, she started a fund asking for $200,000. The money would help her expand the business beyond her home into a commercial property, acquire the needed permits and insurance, and buy equipment.

“It’ll be a little bit of a struggle [to expand],” Knockenhauer said. “But in the end it will be worth it.”
