New manager, menu at Enchillada Express


Candace Mock is the new manager at Enchillada Express.Candace Mock, the new manager of Enchilada Express, is changing the menu and opening other sections of the building.

Mock, who is a student at Cascade Culinary Institute in Bend, has managed mini-marts in the past, been a cook for several years, and worked as a certified nursing assistant.

“The new menu offers breakfast now, with breakfast burritos, pancakes, waffles and really good coffee,” Mock said.

Summer hours have expanded, with the restaurant open from 7 a.m. to 9 p.m.

Fish tacos have also been added to the menu, which features Mexican and Salvadoran food, with handmade tortillas, and combination platters.

Enchilada Express is the only Salvadoran restaurant in Central Oregon, and specializes in Salvadoran “pupusas” stuffed tortillas with meat filling.

“We have a new, faster menu and everything is to go. We’re also filing for a liquor license to serve beer and wine,” she said.

Mock and the restaurant owner Doro Lopez are remodeling a side room into a banquet room for parties, and plan to fix up the deck in the back of the building and put out tables so people can eat outside in the summer.
