For over 25 years, Kurt Goddard has been working as a chef, pastry chef and baker throughout the United States. From Bozeman to Williamsburg, he has worked in fine dining to independent bakeries. Today, along with his wife, Louyan, Goddard is baking original masterpieces to sell at the Beaverton Farmers Market.
Goodard says their most popular products are the cruffins and bi-color chocolate croissants which consists of two different doughs twisted together into a striped pastry and filled with a chocolate cream. Yet it's the raspberry-vanilla and rose cruffin that is their signature flavor and the reason they started the business.
"Our selection is based on the market season. In the summer we focus more on sweet, as the fruits are the star while available. We work with many of the farms and orchards within the market. We usually have two savory items available and during the winter bumps up to three. We usually have between 10-12 different selections and while our classics are always there, we sometimes change items ever couple weeks," Goddard said.
Goddard prefers to eat a savory bite in the morning. His favorites change with his cravings, but enjoys the Monte Carlo (ham, turkey and gruyere cheese inside a croissant with maple glaze and bacon on top). And during the Chinese New Year, he prepares a Cantonese-style barbeque pork croissant. For those with a sweet tooth, "cruffins are pretty much dessert, so those get eaten later in the day, usually."
