After graduating from the famed the Culinary Institute of America in New York, Heidi Liebowitz began a career in California working as a corporate chef. One of her tasks was to provide scratch-made soups for lunch. Her soups became such a hit that the soups sold out every day and she even received fan mail. She moved to Oregon in 2002 her wife suggested Liebowitz should looking at selling her soups directly.
"The Farmers Markets were popular in Oregon we decided maybe I should go check some out. She thought I made the best soups around and I should try and sell them there. I met Ginger at Beaverton Farmers Market and gave her some samples. I was accepted to the market," Liebowitz said.
At the first market Liebowitz attended in 2004, she brought three flavors: Tortilla, Yellow Split Pea and Roasted Tomato. She had two filled coolers with 108 soups and by the end of the day, they sold out!
Today, Souper Natural's brings 20 different flavors to the market where it is sold frozen in 24-ounce containers for $8 or 6 for $40. Top flavors are Sausage Cale, Mexican Street Corn, Sweet Potato Curry and Roasted Tomato and many of her ingredients are bought from local farms. Liebowitz is inspired by delicious meals that she transforms into soup, like her Reuben soup- a take on the classic Reuben sandwich.
"I know what I want the soup to taste like and then build until I achieve the flavor. I'm meant to do this, I think it's my calling," she said.
