Beaverton Farmers Market can sometimes feel like a family affair! Our Marketing Director makes lunches for her kids from foods she finds at the market. It's easy and healthy!

It's minimal work, but high reward for my first grader and preschooler. It's easy to get trapped in a vortex of Pinterest boards for kids' lunches; oftentimes I feel like the recipes are too complicated or have too many steps.

During cold months, I like to stretch our meals by making a big batch of chili. One of our favorites is a butternut squash with Lonely Lane Farms ground pork along with cornbread. For my kids' lunch the next day I heat it up and put it in thermoses with a side of cornbread and fruit. Their favorite lunch is pizza roll-ups, which can be made with any favorite pizza topping. I roll out pizza dough into a rectangle and spread with Portland Fresh Vegan Pesto and top with shredded mozzarella cheese, then I roll up the dough into a log and slice into 12 equal rounds and bake on a parchment-paper lined baking sheet for 10-12 minutes at 425 degrees. I pack them with a side of marinara sauce for dipping.

I like to include a little treat, too. Lately my kids love sliced Golden Delicious apples from Kiyokawa Family Orchards along with Maui Melts caramel sauce for dipping. I also make a no-bake chocolate energy ball using Momo Cocoa unsweetened cocoa powder.
