As you head out for those barbecues and celebrations, I'm a big believer in being the person who brings the salad and healthy dish. You'll be amazed at how fast it will go and what I've noticed is that I'm usually the only one bringing a green salad so … be the one who brings on the greens and be the first in line or you'll be scraping the bottom of the bowl.

Here is my favorite Summer Salad: (Get your biggest Tupperware bowl)

Fill it with fresh spinach and fresh romaine (Try to find them at a farmers market)

Sliver ½ head of red cabbage

1 bunch of green onion, chives or a very thinly sliced red onion - chopped

Slivered almonds or chopped walnuts

1 big shredded carrot 

2 cups fresh blueberries or strawberries

1 large apple sliced very thin and in bite size pieces

½ cup of parmesan cheese  (on the side for those dairy-intolerant folks)

Lime honey mustard vinaigrette 

½ cup EVVO

¼ cup fresh lime juice

¼ cup honey mustard

2 tablespoons honey

½ teaspoon salt and pepper

¼ cup fresh cilantro

Shake it all up in a Mason jar and either toss the salad before serving or serve on the side.
