Prineville-Crook County Chamber of Commerce recently celebrated new business B's Teriyaki with a ribbon-cutting to welcome them to the community.

The food cart is located at Creekside Food Court with a menu that offers teriyaki entrees with beef, chicken and pork, as well as a unique variety of salads and air-fried egg rolls. Ben and Lindsey Stewart opened for business Aug. 20.

The couple is originally from Washington state.

"For years, we have been wanting to do something like this, but up there, there was never the opportunity," indicated Ben Stewart of their move to Crook County.

He added that they moved to Crook County in 2017 and got themselves established, working some other jobs. They found the trailer shell for the food cart and built their food cart from the ground up.

Stewart worked for an Intel-based company in Washington for 13 years. He suffered some adverse health issues and after leaving that occupation, obtained some property in Crook County. His parents had already retired in Prineville, so he and his wife moved to Prineville also.

"We just moved down and built ourselves a tiny home, and here we are," said Stewart.

B's Teriyaki is a very American, traditional teriyaki. They offer teriyaki rice entrees with choices of beef, chicken or pork – or combinations of those choices. They also offer Hawaiian dishes, which are extremely popular. Salads are available for salad-lovers, including Asian, Wasabi and other salads—all with homemade dressings.

"We are working on noodles, but the trailer is so limited in size and power. So, we are trying to work that in somehow, but we just aren't there yet."

Stewart commented that he has cooked teriyaki for his family for many years.

"I have always been interested in the teriyaki food, I have always loved it, so we just started playing around with it and came up with our own menu over the years," Stewart explained of his passion for the teriyaki food. "Down here, we felt like there was nothing here like this at all. That was why we pulled the trigger and said, 'We have to give this a shot.'"

He noted that they are winterized and ready for the weather, and they intend to stay in their location throughout the year. As weather gets more inclement, they are encouraging customers to call orders in ahead for pickup.

He added that they recently offered a student bowl for middle school and high school students, which includes a teriyaki bowl with choice of meat for $5. Currently, they also have a Hawaiian plate on Fridays for $8.

The couple enjoys being involved in the community and have participated in a number of activities, including the recent Candy Crawl. They provided rice bowls and egg rolls for a low price to participants attending an anniversary party at Home Beautiful Oregon in Prineville last Friday, along with a cupcake and beverage trailer.
