Corral Tap Room and Food Carts to open soon
April 23 will mark the fruition of a dream for Slava and Dasha Kropacek.
The couple will officially open The Corral Tap Room and Food Carts on the corner of Third Street and Northwest Locust Avenue, with the help of their sons, Robert and Jerry.
The iconic building that encompasses the tap house was recently completed, displaying a warm and fun environment of western and contemporary accents. There are tables spaced out for visitors to share a beverage and visit, with more seating in the courtyard at the front of the building.
The Kropaceks have been in the restaurant business for more than 30 years. They originally came from the Czech Republic, and Slava has been a chef for more than 50 years. They previously had a business in Government Camp called Glacier House. They sold the business in 2019.
"We worked for Ski Bowl for 15 years," said Dasha.
They left their country more than 30 years ago, when it was still under the Russian and Communism system.
"We left our county in 1987, and everything has changed. We were hoping to go for a better life and more freedom," explained Dasha of their reasons for coming to America. "We spent two years in Austria before we got our paperwork."
They speak German and their native Czech in addition to fluent English. They were always involved in the restaurant business, even in their native country.
They bought a house in Prineville four years ago, as one son lives in Bend and one lives in Redmond.
"We are excited because we always like to do some projects like this," explained Dasha. "It's kind of a family project and everybody is involved."
They bring their signature beer to their tap room, as well as some local beers and various wines.
"We like to support our local community of course, and we like to keep ours too," she said of their beer selections.
In addition to the tasteful architecture of The Corral Tap House, there is a courtyard with a fire pit and two food carts for hungry customers. The two food carts include Freso & Fryed and Just Wok'n Around. The former is a Spanish and Mexican cuisine, while Just W ok'n Around is a food cart with Asian dishes.
"I think it's a good start," concluded Dasha.
