Cazadero restaurant plans opening festivities
After a few growing pains, Sherry and Cam Andrus of The Cazadero are ready to celebrate the restaurant's grand opening.
When the mother-son team took over the restaurant in May, there were several challenges to overcome, including staffing changes and lengthy wait times for food.
"For the last two months, we've really been working on the quality of the food, customer service and speed," Sherry said. "We think we've got the team down."
For a week in July, the restaurant worked with Levatino Harris, a Chicago-based chef who has been a personal cook for many celebrities.
"He tested each of our menu items and vlogged to his fanbase about how awesome we are," Sherry said. "It was validation that we're on the right track."
She added that "it was fun to see the smiles on the staff's faces as they learned new things."
Cam said he appreciated Harris' validation and constructive criticism, along with "the fact that he commented on the quality of our stuff."
Along with Harris, The Cazadero is also working with a restaurant consulting company.
Sherry noted that the restaurant "is very different than it was in May and June."
"We had a rough go in the beginning but everything has been analyzed, and we've put in systems," she said.
Previously, the average ticket time at The Cazadero was 120 minutes. Now, this number is down to seven minutes.
"We're finally got the food times down. I want to thank the community for their patience," Sherry said.
The grand opening for the restaurant at 352 S.E. Highway 211 is scheduled for Thursday, Aug. 16. There will be a ribbon cutting with the Estacada Chamber of Commerce at 4 p.m., a comedy show at 4 p.m. and a tap takeover by Wild Ride Brewing all evening.
Along with the grand opening festivities, The Cazadero has also planned trivia on Tuesdays, taco Wednesdays, comedy on Thursdays and live music on Saturdays.
