All you knead are waffles
At a new establishment in Estacada, you can top your waffles with everything from hash browns and bacon to blackberry cream cheese spread and snickerdoodle cookie crumble.
Melissa Keogan opened the Freckled Peach, at 437 N.E. Main St., in November. The food cart serves a variety of sweet and savory waffles and is open from 8 a.m. to 3 p.m. Mondays, Tuesdays, Thursdays and Fridays, and 8 a.m. to 2 p.m. Saturdays and Sundays.
Each morning, the dough for waffles is created, a process that takes around two hours. A variety of other ingredients are homemade, including the cheese sauce and rosemary syrup.
"We try to do as much homemade as possible," Keogan said.
One of the reasons Keogan enjoys working with waffles is the opportunities for creativity they offer, and she particularly enjoys "making them pretty and topping them."
In the future, she hopes to have a presence at events like the Estacada Timber Festival and Upper Clackamas Whitewater Festival. Previously, the Freckled Peach was at Hillockburn Farm's grand opening in December.
Keogan grew up in Eagle Creek and previously worked at Planet Cup of Joe, Sparky's Pizza and Subway. She's looking forward to welcoming community members to her new establishment.
"Being able to see them and have them support me means a lot," she said. "That's why I'm here (in Estacada). I've built so many relationships with people here."

The Freckled Peach, topped with blackberry cream cheese, peach cinnamon compote, homemade whipped cream and snickerdoodle cookie crumble

The Power House, topped with rosemary sausage gravy, hash browns and a fried egg
The Turkey Havarti Melt, topped with sliced turkey, bacon, tomato, melted cheese and garlic aioli
The Big Poppa, topped with garlic chive cream cheese spread, bacon, ham, cheese sauce and jalapenos
