2021 FOREST GROVE/CORNELIUS DINNER AND AUCTION MENU

PRIME TIME RESTAURANT & SPORTS BAR

Entrée #1

Coco Shredded Pork Tamales: Corn husks filled with Massa corn flour, poblano peppers, red onion, Oaxaca cheese, seasoned shredded pork and ranchero sauce. Side of pinto and black beans and Mexican cilantro lime coleslaw.

Entrée #2

Little Mermaid Shish Kabobs: Marinated and seasoned beef steak skewered with assorted vegetables, cherry tomatoes, pineapple, tri-colored potatoes. Seasoned grilled sweet potato flat bread with yogurt tahini sauce. Side of quinoa mixed with green chickpeas, kale and edamame.

Entrée #3 Vegetarian

Vegetarian Shish Kabobs: Marinated assorted vegetables, seasoned beyond plant based meat, cherry tomatoes, pineapple, tri-colored potatoes. Seasoned grilled sweet potato flatbread with yogurt tahini sauce. Side of quinoa mixed with green chickpeas, kale and edamame.

Each meal includes:

Sponge Bob Crabby Cakes: Dungeness crab and bay shrimp with red and green bell peppers, green onions, panko, milk, mayo, and seasonings. Served with lemon saffron seaweed aioli.

James & The Giant Peach Salad: Poached bourbon peaches over mixed greens with red onion, shaved radish, candied hazelnuts, blueberries, crisp prosciutto, honey-infused goat cheese and balsamic drizzle. On-the-side creamy honey poppy seed dressing.

Concession Stand Popcorn Cupcakes: Chocolate cupcakes topped with buttercream frosting, caramel popcorn, and bourbon caramel sauce.

Chicken Cordon Bleu: Chicken fillets filled with Sweet Ham and Emmentaler Cheeses dipped in Egg Wash and Coated with Panko Bread Crumbs. Served with Grilled Asparagus with a light hollandaise drizzle

Beef Roulade: Flank Steak Pinwheel rolled with Spinach, Onions and Emmentaler Cheeses. Served with Grilled Asparagus with a light hollandaise drizzle

Entrée #6 Vegetarian

Pasta Fresca: Angel hair Pasta tossed in a light seasoned Marinara Sauce with sautéed Yellow and Red Bell Peppers and Onions. Served with Grilled Asparagus with a light hollandaise drizzle

Each meal includes:

Antipasto skewers: Cheese, meat, stuffed olives, and artichokes with a light pesto drizzle.

Avocado Caprese Salad: Avocado, Rainbow tomatoes, mozzarella and greens tossed with a balsamic reduction

Brioche roll with clover honey butter

Tuxedo Entremet: Layers of chocolate cake, cheesecake and mousse enrobed in chocolate ganache and Hollywood style glitz.
