Some folks have gained the "covid 19" during the coronavirus confinement and might be looking for a healthier option for take out food. A new food cart just opened in Gresham with a light touch that hits that mark.

Salad Heroes is in the food cart pod dubbed "The Quad" at 58 N.E. Burnside St., in front of Gresham High School's stadium, and is open from 11 a.m. to 5 p.m. Monday through Saturday.

The cart offers salads and wrap sandwiches from basics like "simple salad" to chicken Caesar to steak and spinach. Salads run from $7 to $15 and wraps $5 to $12. Diners can create their own salads selecting from a variety of vegetables, proteins and dressings.

Owners Melissa and Chris Stiers, who live in Gresham, are veteran entrepreneurs.

Melissa Stiers is a Sandy native. After earning an associates degree in integrated media, she opened Purely Yours Photography. She also started and runs The Tidy Sister, a housekeeping company that now has six employees. Chris Stiers is a metal fabricator.

They've brought in Melissa's sister, Loni Peck, who has restaurant experience, as the chef. Melissa calls Loni "the heartbeat of this whole thing."
