Troutdale business shares delicious low-carb, gluten-free treats to East County residents

The inspiration behind Low Carb Comforts was the effort by Cheryl Cosgrove to help her husband Michael eat healthier without totally sacrificing his comfort foods like doughnuts and cookies. Now, the healthy eating choice has turned into a laundry list of low carb and sugar free recipes and full time stand at Troutdale Station, 151 S.W. 257th Dr., Troutdale.

Michael's decision to eat healthier and be more conscious of his health came after the death of Cheryl's mother. "Cheryl's mother died of obesity when she was in her forties," Michael remembers. "Me being around 436 pounds at my largest, Cheryl didn't want me to die and leave our boys without a parent." With the looming cloud behind him, Michael decided he would cut out sugar and carbs as much as he could, but his lifestyle change wasn't easy. "I cut out all of the sugar and the carbs, but man it was hard," Michael said. "It was tough, and I would always be saying, 'I wish I had a doughnut or a coffee cake or fill in the blank.'" To try to find ways to make the lifestyle change a little easier, Cheryl and Michael went into the kitchen and tried to concoct new carbs and sugar free recipes for Michael's old comfort foods.

"We would just make things and make it as healthy as it could be." Michael said. "It got to the point where were just churning out so much good food we just decided to share it."

With a growing recipe book of delicious low carb recipes, Cheryl background in restaurant industry and Michael's out-going and can-do attitude the duo decided to try and sell their scrumptious creations.

"It was never tough because I come from more of a place where I want to give new things a try, where (Cheryl) is much more reserved," Michael said. But, before they entirely committing to their idea, they hit the farmers markets to test out the waters.

"Last year we spent all summer at the Gresham and Happy Valley farmers markets, and it was great," Michael said. "The community loved it, not everyone would stop because they saw the healthy words, but those who did said that the food was good regardless of it being sugar free."

One of their biggest hits was their no sugar, low carb and gluten free cheesecakes. The menu also includes donuts, chocolate chip cookies, brownies and chocolate dipped macaroons to name a few.

While selling at the Happy Valley farmers market, Michael and Cheryl caught word of Troutdale Station opening and taking applications for restaurants and food carts. After no time the couple had completed their application and were on the short list for space inside the new food cart pod.

The couple's cat, Twiddles, also serves as the business's logo and the inspiration for the business's philanthropic efforts. "Twiddles is a rescue, so we thought we would donate to the local shelter," Michael said. "We are donating a dollar for every donut sold to the shelter. We know it isn't perfect, but we just want to make the world just a little bit better."

Cheryl and Michael officially opened Low Carb Comfort at the Troutdale Station on Saturday, April 30. Although the husband and wife team are extremely happy of the success, they have been able to gain from being at the food cart hub, Michael said their main goal is to have a brick-and-mortar.

"The end goal is to have a brick-and-mortar," Michael said. "We have treats here and a few savory items like our lasagna, but we honestly have books of recipes of low carb foods that we haven't even touched yet."

If a low carb restaurant wasn't unique enough, Michael also wants to attach a tabletop gaming store. Though still a way away, Michael and Cheryl's main focus is continuing introducing these foods to new people and a consistent stop for their ever-growing loyal customers.
