Two local wineries teaming up to open downtown Hillsboro wine bar
Two Washington County wineries have teamed up to open a wine bar in downtown Hillsboro.
Beaverton-based Résolu Cellars and Rue Cler Wine, which sells its wine online, plan to open the joint winery at 260 S.E. Fourth Ave in January 2022, according to a statement from the wineries Oct. 22.
The Birch Building, as the site is called, was recently purchased by Hillsboro's White Birch Design Co. and will serve as warehouse space for the home goods retailer.
It will double the production space of both winemakers and allow them to host events and tastings.
The winemakers noted the location places them in an urban space while remaining close to the local vineyards they source from, allowing them to produce wines including Viognier, Chardonnay, and Pinot Noir of the Willamette Valley, as well as bolder reds from distinctive American Viticultural Areas in Central Washington known for their quality fruit.
"Locals and tourists alike will find this wine bar destination to be an urban oasis where they can sample a wide range of wines from Italian, Bordeaux, and Rhone varietals as well as unique blends such as GSM, Vino Barbitivo, Triomphe Bordeaux 5-Blend and Côte Rôtie style Syrah, locally sourced Rosé and sparkling wines too," the winemakers said.
Résolu Cellars and Rue Cler Wine plan to host pop-up tastings as construction allows prior to the space fully opening, they said.
