Helpful tutorial explains how to convert a dial gauge canner to a weighted gauge.

To address this challenge, the Family & Community Health Program produced a YouTube video that explains how to convert a dial gauge canner to a weighted gauge canner.

"Making the conversion eliminates the need to rely on the dial gauge to ensure that the correct pressure has been reached inside the canner to ensure a safe product," said Kelly Streit, an OSU Extension registered dietitian with the Family & Community Health Program.

Home canners know that the first step to ensure food safety when canning low-acid foods is to get their pressure canner gauge tested every year.



OSU Extension Service offices in some counties will test dial gauges for free, but the nearest office might not be convenient for everyone.

Fortunately, there is an alternative to using the dial gauge when canning. It involves substituting a three-piece adjustable-weight pressure regulator for the dial gauge. This conversion changes a dial gauge canner into a weighted gauge canner. The pressure regulator rocks when the correct pressure is reached, as demonstrated in a titled "Using a Weighted Gauge on a Dial Gauge Canner." The video provides step-by-step instructions, as well as some best practice tips and science-based resources.

According to Streit, when used correctly, a three-piece adjustable-weight pressure regulator ensures consistently accurate pressure, thus preventing the possibility of botulism poisoning due to under processing low-acid foods.
