Bluefish Fine Foods opens in Madras with breakfasts, sandwiches, salads and more

Rodney Chiddix has long been in the food industry. He's worked in restaurants, manufacturing and distribution. When he decided he was ready to open a place of his own, he saw an opportunity in Madras.

With family from the area, Chiddix was looking for the right location in Central Oregon. His uncle suggested Madras, and once they found a location, Bluefish Fine Foods opened shop.

The restaurant offers fresh foods for breakfast and lunch, complete with coffee, tea and plenty of atmosphere. Located in a small house behind Columbia Bank at 123 SW H St., the cozy and airy atmosphere offers a nice spot to enjoy a sandwich and coffee.

"Hope I can offer something a little bit different that folks will be interested in," said Chiddix. "I want to provide simple, good food for people to enjoy."

The menu, all hand-curated by Chiddix, consists of breakfast favorites like pastries and a weekly quiche special, as well as curated sandwiches and salads for lunch.

The lunch menu consists of the classic deli fare you'd expect, including a BLT that has six pieces of bacon, as well as some sandwiches and panini of Chiddix's own design. Sandwiches like the Veginator and the French Connection offer unique flavors, such as red-pepper aioli and strawberry pinot noir jam. Fresh ingredient salads are also available along with rotating special items.

The name of the restaurant, Bluefish Fine Foods, stems from Chiddix's love and appreciate of the waterways and oceans of the West Coast. He hopes to support local efforts to conserve and educate about water stewardship through the restaurant.

Chiddix is inspired by the many years he's spent in the food industry and strives for fresh, handmade perfection in his foods. He says the menu continues to grow and has already added options for a build your own sandwich, as well as catering and online orders. While, ironically, there's no fish on the menu yet, he says a tuna salad sandwich may be in the works.

"I won't put it on the menu until its perfect," said Chiddix. "I want to provide the best and freshest food possible."
