COURTESY: PROVIDORE FINE FOODS - Produce purveyor Josh Alsberg, left, is the latest vendor to join the Providore Fine Foods marketplace. The 6,500-square foot renovated space will feature an open marketplace design with local purveyors selling side by side, a large parking lot, garage doors for al fresco dining options and a larger production kitchen for Pastaworks. A new produce market will open in Northeast Portland in January, part of the Providore Fine Foods marketplace development underway.

Rubinette Produce Market is a project of Josh Alsberg, a 12-year produce veteran and formerly the produce buyer and farm liaison at Food Front Grocery.

Rubinette is named for the Oregon-bred Rubinette apple.

“The Rubinette is a little green-striped apple, but when you cut off a slice for a customer, their eyes light up with the flavor," Alsberg says.

He wants customers to discover ingredients that light up their palate and are only seen on the best menus in Portland or at the farmer’s markets.

Providore Fine Foods will be a European-style marketplace set to open in January at 2340 N.E. Sandy Blvd., led by the owners of Pastaworks.

Other marketplace tenants will be Pastaworks, Arrosto, Little T American Baker, Flying Fish, The Meat Monger and eco-florist Emerald Petals.
